Lemon Bar Cookie Cups

Delightful cookie cups filled with tangy lemon curd and topped with powdered sugar and lemon zest.

  • 1 cup sugar cookie dough
  • 1 cup homemade lemon curd
  • 1/4 cup powdered sugar (optional for dusting)
  • Lemon zest (for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Roll the sugar cookie dough into small balls and place them in a greased muffin tin, pressing down to form a cup shape.
  3. Bake for 10-12 minutes until they are lightly golden.
  4. Remove the cookie cups from the oven and let them cool completely.
  5. Once cooled, fill each cup with homemade lemon curd.
  6. Dust with powdered sugar and garnish with lemon zest.
  7. Serve at parties or enjoy them as a sweet treat!

Notes

For the best flavor, use homemade lemon curd. Grease the muffin tin well to prevent sticking. Adjust the sweetness of the lemon curd to your taste.
