Lemon Blueberry Cheesecake

  • 2 cups crushed graham crackers
  • 1/2 cup unsalted butter, melted
  • 2 tablespoons sugar
  • 4 (8-ounce) packages cream cheese, softened
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 1/4 cup lemon juice
  • 1 teaspoon lemon zest
  • 2 cups fresh blueberries

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a bowl, mix crushed graham crackers, melted butter, and sugar. Press the mixture into the bottom of a springform pan.
  3. In a large mixing bowl, beat the cream cheese until smooth. Gradually add sugar and vanilla, mixing until combined.
  4. Add eggs one at a time, mixing well after each addition. Stir in lemon juice and lemon zest.
  5. Fold in fresh blueberries, then pour the cheesecake mixture into the prepared crust.
  6. Bake for 55-60 minutes or until the center is set.
  7. Allow to cool, then refrigerate for at least 4 hours.
  8. Serve topped with additional blueberries.

Notes

Serve chilled for the best flavor and texture; can garnish with whipped cream or powdered sugar.
