Lemon Blueberry Cheesecake

A delightful dessert combining the tanginess of lemon and sweetness of fresh blueberries, perfect for any occasion.

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 tablespoon lemon juice
  • 1 tablespoon lemon zest
  • 1 cup sour cream
  • 1 cup fresh blueberries

Instructions

  1. Preheat your oven to 325°F (165°C).
  2. Combine graham cracker crumbs and melted butter in a bowl. Press the mixture into the bottom of a springform pan to form the crust.
  3. Beat cream cheese and sugar together until smooth in another bowl.
  4. Add eggs one at a time, mixing well after each addition.
  5. Stir in lemon juice and zest until combined.
  6. Pour the cream cheese mixture over the crust in the springform pan.
  7. Bake for about 55-60 minutes or until the center is set.
  8. Let cool, then spread sour cream over the top.
  9. Top with fresh blueberries.
  10. Refrigerate for at least 4 hours before serving.

Notes

Make sure the cream cheese is softened for easy mixing. Be gentle when folding in the blueberries. For a different twist, add lemon curd before the sour cream layer.
