A refreshing no-bake dessert with zesty lemon flavor and creamy condensed milk, perfect for any occasion.

Ingredients

Scale
  • 2 cups crushed plain biscuits or graham crackers
  • 1/2 cup unsalted butter, melted
  • 14 oz sweetened condensed milk
  • 1/2 cup fresh lemon juice
  • 1 tbsp lemon zest
  • 1/2 cup shredded coconut (optional)

Instructions

  1. Place the biscuits in a food processor and pulse until fine crumbs form.
  2. Pour the melted butter over the biscuit crumbs and mix until the texture resembles wet sand.
  3. Line an 8×8-inch pan with parchment paper. Press the crumb mixture firmly into the base using the back of a spoon or a flat-bottomed glass.
  4. Refrigerate the base for 20–30 minutes to firm up.
  5. In a bowl, whisk the sweetened condensed milk with the fresh lemon juice until thickened.
  6. Stir in the lemon zest and shredded coconut if you’re using it.
  7. Pour the lemon filling over the chilled base and spread it evenly with a spatula.
  8. Refrigerate for at least 3–4 hours or overnight until fully set.
  9. Lift the slice from the pan using the parchment overhang. Slice into squares using a warm, clean knife.
