Lemon Garlic Shrimp Orzo

A delightful dish of shrimp and buttery orzo pasta, brightened with lemon and garlic.

  • 8 oz orzo pasta
  • 1 lb shrimp, peeled and deveined
  • 3 cloves garlic, minced
  • 1 lemon, juiced and zested
  • 2 tbsp olive oil
  • 1/2 cup Parmesan cheese, grated
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large skillet, heat olive oil over medium heat.
  2. Add minced garlic and sauté for about 1 minute until fragrant.
  3. Add the shrimp to the skillet, season with salt and pepper, and cook until pink and opaque, about 2-3 minutes.
  4. Meanwhile, cook orzo according to package instructions. Drain and set aside.
  5. Once the shrimp is cooked, add the cooked orzo to the skillet along with lemon juice and zest.
  6. Stir in the Parmesan cheese until well combined.
  7. Garnish with chopped parsley and serve warm.

Notes

To store leftovers, place them in an airtight container in the refrigerator. Best eaten within 2-3 days. Reheat gently.
