Lemon Icebox Dessert

A refreshing and easy dessert with a crunchy graham cracker crust and a light, creamy lemon filling.

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 1 (14-ounce) can sweetened condensed milk
  • ½ cup freshly squeezed lemon juice
  • 1 tablespoon grated lemon zest
  • 1 cup heavy whipping cream
  • ¼ cup powdered sugar

Instructions

  1. Combine graham cracker crumbs and melted butter until well blended.
  2. Press the mixture firmly into the bottom of a 9×9-inch baking dish to form the crust.
  3. Mix sweetened condensed milk, lemon juice, and lemon zest until smooth.
  4. Whip the heavy cream and powdered sugar until stiff peaks form.
  5. Fold the whipped cream into the lemon mixture.
  6. Pour the lemon filling over the crust, spreading it evenly.
  7. Refrigerate for at least 240 minutes or until set.
  8. Cut into squares and serve chilled, garnished with additional lemon zest if desired.
