Lemon Rice Krispy Treats

A delightful twist on classic Rice Krispy treats, flavored with refreshing lemon for a perfect summer dessert.

  • 6 cups Rice Krispies cereal
  • 3 tablespoons unsalted butter
  • 3 cups mini marshmallows (half lemon-flavored, half classic white)
  • Zest of 1 lemon (plus more for garnish)
  • 1/2 teaspoon lemon extract (optional)
  • 1/2 cup white chocolate chips or melting wafers
  • Lemon peel or zest, for garnish

Instructions

  1. Grease a 9×9-inch baking pan or line with parchment paper.
  2. Melt the butter in a large saucepan over low heat. Add the mini marshmallows and stir until completely melted.
  3. Stir in the lemon zest and lemon extract (if using).
  4. Remove from heat and immediately stir in the Rice Krispies until coated.
  5. Press the mixture evenly into the prepared pan using a buttered spatula.
  6. Melt the white chocolate chips in the microwave and drizzle over the top of the bars.
  7. Finish with a sprinkle of lemon zest or fine curls of lemon peel.
  8. Allow the treats to cool for at least 30 minutes, cut into squares, and enjoy!

Notes

Store treats in an airtight container at room temperature for up to a week. Can refrigerate for longer shelf life, but they may become firmer.
