Mango Cheesecake Bars

Delightful cheesecake bars with the creamy richness of cheesecake and the tropical sweetness of mangoes.

  • 1 1/2 cups graham cracker crumbs
  • 1/3 cup sugar
  • 1/2 cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1 cup sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup mango purée

Instructions

  1. Preheat the oven to 325°F (163°C).
  2. In a bowl, mix the graham cracker crumbs, 1/3 cup sugar, and melted butter until well combined.
  3. Press this mixture into the bottom of a greased 9×9 inch baking dish to form the crust.
  4. In a large bowl, beat the cream cheese and 1 cup sugar until smooth.
  5. Add the eggs one at a time, mixing well after each addition.
  6. Stir in the vanilla extract until fully blended.
  7. Pour the cream cheese mixture over the crust in the baking dish.
  8. Drop spoonfuls of mango purée onto the cream cheese mixture and gently swirl with a knife for a marbled effect.
  9. Bake for 45-50 minutes, or until the center is set.
  10. Allow to cool, then refrigerate for at least 2 hours before cutting into bars.

Notes

For best results, use fresh mangoes when in season.
