Mango Dessert Bars

  • 1 ½ cups all-purpose flour
  • ½ cup unsalted butter, softened
  • ¼ cup granulated sugar
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt
  • 3 ripe mangoes, pureed
  • 1 cup sweetened condensed milk
  • 2 large eggs
  • 1 tablespoon lime juice
  • Zest of 1 lime
  • 1 tablespoon cornstarch

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix together the flour, softened butter, granulated sugar, vanilla extract, and salt until the mixture is crumbly.
  3. Press the dough evenly into the bottom of a greased 9×13 inch baking dish.
  4. Bake for about 15 minutes until lightly golden.
  5. In another bowl, combine the pureed mangoes, sweetened condensed milk, eggs, lime juice, and lime zest. Blend until smooth.
  6. Stir in cornstarch until well incorporated.
  7. Pour the mango filling over the crust and spread it evenly.
  8. Bake for an additional 25-30 minutes until set.
  9. Allow the dessert to cool completely before cutting it into bars.

Notes

Dust with powdered sugar when serving, and pair with vanilla ice cream or whipped cream.
