Mango Oatmeal Crumble Bars

Delicious and healthy Mango Oatmeal Crumble Bars made with ripe mangoes and a crunchy oatmeal topping, perfect for breakfast or as a snack.

Ingredients

  • 2 cups rolled oats
  • 1 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1/4 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/2 cup unsalted butter, melted
  • 2 ripe mangoes, peeled and diced
  • 1 tablespoon lemon juice
  • 1 tablespoon honey (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix rolled oats, flour, brown sugar, salt, and cinnamon.
  3. Pour in the melted butter and stir until combined. Reserve 1 cup of this mixture for topping.
  4. Press the remaining mixture into the bottom of a greased 8×8-inch (20×20 cm) baking dish.
  5. In another bowl, combine diced mangoes, lemon juice, and honey. Spread this mango mixture evenly over the pressed oat base.
  6. Sprinkle the reserved oat mixture over the mango layer.
  7. Bake for 25-30 minutes, or until the top is golden brown.
  8. Allow the bars to cool completely before slicing.

Notes

Store leftover bars in an airtight container at room temperature for up to three days or in the refrigerator for up to a week. For longer storage, freeze them for up to three months.
