Mango Slaw

A refreshing and colorful salad that combines the sweetness of ripe mangos with crunchy vegetables, perfect for summer barbecues and picnics.

Ingredients

  • 2 ripe mangos, diced
  • 1 red bell pepper, thinly sliced
  • 1 cup shredded cabbage
  • 1 carrot, grated
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup cilantro, chopped
  • 2 tablespoons lime juice
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Combine the diced mangos, red bell pepper, shredded cabbage, grated carrot, red onion, and cilantro in a large bowl.
  2. Whisk together the lime juice, olive oil, salt, and pepper in a small bowl.
  3. Pour the dressing over the slaw mixture and toss to combine.
  4. Serve immediately or chill in the refrigerator for 30 minutes before serving.

Notes

Best enjoyed fresh, but can be stored in an airtight container for up to 3 days. Keep the dressing separate until ready to serve.
