Mardi Gras Deviled Eggs

A colorful twist on classic deviled eggs, enhanced with Cajun seasoning for a flavorful appetizer perfect for celebrations.

  • 6 large eggs
  • 3 tablespoons mayonnaise
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Cajun seasoning
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • Chopped green onions for garnish
  • Paprika or additional Cajun seasoning for garnish

Instructions

  1. Hard boil the eggs by placing them in a pot, covering them with water, and bringing to a boil. Once boiling, cover and remove from heat. Let sit for 12-15 minutes.
  2. Drain the eggs and cool them in ice water.
  3. Once cool, peel the eggs and slice them in half lengthwise.
  4. Remove the yolks and place them in a bowl.
  5. Mash the yolks with mayonnaise, Dijon mustard, Cajun seasoning, lemon juice, salt, and pepper until smooth.
  6. Spoon or pipe the mixture back into the egg whites.
  7. Garnish with chopped green onions and a sprinkle of paprika or additional Cajun seasoning before serving.

Notes

Use fresh eggs for better flavor. For a creamier texture, add more mayonnaise. Feel free to adjust the Cajun seasoning to fit your taste.
