Mediterranean Quesadillas with Spinach, Feta, Mozzarella, and Red Onion

Quick and flavorful Mediterranean quesadillas filled with spinach, feta, and mozzarella, perfect for lunch or a light snack.

  • 4 flour tortillas
  • 1 cup fresh spinach (chopped)
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup crumbled feta cheese
  • 1 small tomato (diced)
  • 1/4 cup red onion (thinly sliced)
  • 1 tablespoon olive oil
  • Black pepper (to taste)

Instructions

  1. Make the filling by mixing the cheeses, spinach, tomato, red onion, and black pepper in a bowl.
  2. Lay a tortilla flat and put one-fourth of the filling on half of it. Fold the tortilla over the filling.
  3. Heat a non-stick skillet over medium heat and add the olive oil.
  4. Place the filled tortilla in the skillet and cook until the bottom is golden, about 3–4 minutes.
  5. Flip the quesadilla carefully and cook the other side for 3–4 minutes until crispy.
  6. Remove from heat, slice into wedges, and serve warm.

Notes

Chop spinach small to blend well. Use medium heat to avoid burning the tortilla before the cheese melts.
