Moist Zesty Lemon Loaf

A cheerful treat that combines sweet and tangy lemon flavors, perfect for a snack or dessert.

  • 2 teaspoons Baking Powder
  • 1 teaspoon Baking Soda
  • 1/2 teaspoon Salt
  • 1 cup Granulated Sugar
  • 1/2 cup Unsalted Butter
  • 3 large Eggs
  • 1/2 cup Whole Milk
  • 1/4 cup Fresh Lemon Juice
  • 2 tablespoons Lemon Zest
  • 1 teaspoon Pure Vanilla Extract
  • 1 cup Powdered Sugar
  • 2 tablespoons Fresh Lemon Juice

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a loaf pan or line it with parchment paper.
  2. Mix the flour, baking powder, baking soda, and salt in a bowl. Set it aside.
  3. Beat the unsalted butter and granulated sugar together until creamy.
  4. Add the eggs one at a time, mixing well after each addition.
  5. Stir in the milk, fresh lemon juice, lemon zest, and vanilla extract.
  6. Gradually add the dry mixture to the wet mixture. Mix until just combined.
  7. Pour the batter into the prepared loaf pan and smooth the top.
  8. Bake for about 50-60 minutes, or until a toothpick inserted comes out clean.
  9. Let the loaf cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
  10. Mix the powdered sugar with the lemon juice for the glaze to your desired consistency. Drizzle over the cooled loaf.
