One-Pan Bold Honey BBQ Chicken Rice

A savory dish combining chicken, rice, and a hint of sweetness from honey, all cooked in one pan for busy weeknights.

  • 1 lb boneless, skinless chicken thighs or breasts
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • ½ cup BBQ sauce
  • ¼ cup honey
  • 1 cup mixed vegetables (frozen or fresh)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp smoked paprika
  • Salt and pepper to taste

Instructions

  1. In a large skillet over medium heat, sear the seasoned chicken for about 5 minutes on each side until browned.
  2. Whisk together the BBQ sauce and honey in a small bowl; pour this mixture over the chicken.
  3. Add rice and chicken broth to the skillet; stir to combine everything well.
  4. Bring the mixture to a simmer; then cover and cook on low for about 20 minutes until the rice is tender.
  5. During the last 5 minutes of cooking, add the mixed vegetables on top to steam.
  6. Let the dish sit for 5 minutes before fluffing the rice with a fork and serving.

Notes

Adjust seasoning according to taste. Adding more honey enhances sweetness, while extra BBQ sauce makes it bolder. Consider adding jalapeños for spice.
