One-Pan Honey BBQ Chicken Rice

This quick and simple one-pan meal features tender chicken in a sweet and smoky honey-BBQ sauce served over soft rice, perfect for weeknight dinners.

  • chicken thighs or breasts
  • 1 cup rice
  • 1 cup chicken broth
  • 1/2 cup honey
  • 1/2 cup BBQ sauce
  • 1 tablespoon soy sauce
  • 1 tablespoon olive oil
  • salt and pepper to taste
  • optional: chopped green onions for garnish

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large oven-safe pan, heat olive oil over medium heat.
  3. Season the chicken with salt and pepper, then sear in the pan until browned on both sides.
  4. In a bowl, mix honey, BBQ sauce, and soy sauce. Pour the sauce over the chicken.
  5. Add rice and chicken broth to the pan, stirring to combine.
  6. Bring to a simmer, then cover the pan and transfer it to the preheated oven.
  7. Bake for about 25-30 minutes, or until the chicken is cooked through and the rice is tender.
  8. Let it rest for a few minutes before serving.
  9. Garnish with chopped green onions, if desired.

Notes

This dish can be stored in an airtight container in the fridge for 3-4 days or frozen for up to 2 months.
