Parmesan Garlic Roasted Carrots

A simple, tasty side that cooks fast and pleases many with sweet, soft carrots enhanced by garlic and Parmesan.

Ingredients

  • 1 pound carrots (Fresh, firm carrots are preferred.)
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced (Fresh garlic will yield better results.)
  • 1/4 cup grated Parmesan cheese (You can substitute with any hard cheese if needed.)
  • Salt and pepper to taste (Adjust seasoning as per preference.)
  • Fresh parsley for garnish (optional) (Use as a garnish when serving.)

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Wash and peel the carrots if you like.
  3. Cut them into even sticks or leave small carrots whole.
  4. Mince the garlic.
  5. Toss the carrots with olive oil, minced garlic, salt, and pepper on a baking sheet. Spread them in one layer.
  6. Roast for 20–25 minutes, stirring once, until carrots are tender and edges are browned.
  7. Remove from oven and sprinkle Parmesan over hot carrots.
  8. Toss gently so cheese melts and sticks. Garnish with parsley if you want.

Notes

Avoid adding Parmesan too early to prevent burning. For better caramelization, use a hot oven.
