Pineapple Chicken and Rice

A delightful dish combining tender chicken and sweet pineapple in a savory sauce, perfect for any meal.

Ingredients

  • 1 lb Chicken Breast
  • 2 tbsp Olive or Sesame Oil
  • 2 cloves Garlic
  • 1/2 cup Soy Sauce
  • 1/3 cup Pineapple Juice
  • 2 tbsp Honey or Brown Sugar
  • 1 tbsp Rice Vinegar or Apple Cider Vinegar
  • 1 tsp Cornstarch
  • 1 tbsp Water
  • 1.5 cups Cooked Rice
  • 1 cup Pineapple Chunks
  • 1/2 whole Red Bell Pepper
  • 1/4 cup Green Onions
  • Sesame seeds
  • Crushed red pepper

Instructions

  1. Cut the chicken breast into bite-sized pieces.
  2. Heat oil in a large skillet over medium heat, add minced garlic and sauté for about 30 seconds.
  3. Add the chicken pieces to the skillet and cook until browned and cooked through, about 5-7 minutes.
  4. In a bowl, mix soy sauce, pineapple juice, honey (or brown sugar), vinegar, cornstarch, and water until combined.
  5. Pour this sauce over the cooked chicken and stir well, letting it simmer for 2-3 minutes until the sauce thickens slightly.
  6. Add in pineapple chunks and diced red bell pepper, stir together, and cook for another 2-3 minutes.
  7. Serve over cooked rice, garnished with green onions, sesame seeds, and crushed red pepper if desired.

Notes

Cut chicken into uniform pieces for even cooking. Adjust sweetness with honey or brown sugar to taste.
