Pineapple Upside Down Sugar Cookies

Delightful sugar cookies topped with pineapple rings, bringing together tropical flavors and a soft, chewy texture.

  • 1 cup unsalted butter (softened)
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract (optional)
  • 2 cups all-purpose flour (or gluten-free blend)
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 can canned pineapple rings (well-drained)
  • 2 tablespoons additional sugar for sprinkling

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together the softened butter and granulated sugar until light and fluffy.
  3. Add the egg and vanilla extract (if using) to the bowl. Mix until well combined.
  4. Whisk the flour, baking soda, and salt in another bowl.
  5. Gradually add the dry ingredients to the wet mixture, mixing until the dough comes together.
  6. Line a baking sheet with parchment paper.
  7. Place a pineapple ring on each spot where you want a cookie.
  8. Spoon cookie dough into the center of each pineapple ring.
  9. Sprinkle a little sugar on top of each cookie before baking.
  10. Bake for about 12-15 minutes or until the edges are golden.
  11. Allow them to cool on the baking sheet for a few minutes, then transfer to a wire rack.

Notes

Store cookies in an airtight container at room temperature for 4-5 days or freeze for up to 3 months.
