Pioneer Woman Enchiladas

A comforting and satisfying Mexican dish featuring ground beef, cheese, and enchilada sauce.

  • 1 pound ground beef
  • 1 small onion (chopped)
  • 2 cloves garlic (minced)
  • 1 can (10 oz) red enchilada sauce
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 teaspoon chili powder
  • ½ teaspoon cumin
  • ½ teaspoon salt
  • 8 small flour tortillas
  • 2 cups shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 2 tablespoons chopped fresh cilantro (optional)

Instructions

  1. Preheat the Oven: Start by preheating your oven to 350°F (175°C).
  2. Cook the Beef: In a large skillet, brown the ground beef over medium heat until fully cooked. Drain any excess fat.
  3. Add Garlic and Spices: Add the chopped onion and minced garlic to the skillet. Cook until the onion is soft. Stir in the chili powder, cumin, and salt.
  4. Add Tomatoes and Sauce: Pour in the diced tomatoes with green chilies and the red enchilada sauce. Stir well to combine and let it simmer for a few minutes.
  5. Fill the Tortillas: Take each tortilla and spoon a portion of the beef mixture down the center. Sprinkle some cheese on top and then roll the tortilla up tightly. Place it seam-side down in a greased baking dish.
  6. Add Sauce and Cheese: Once all tortillas are filled and placed in the baking dish, pour any remaining enchilada sauce over the top. Sprinkle with the remaining cheddar and Monterey Jack cheese.
  7. Bake the Enchiladas: Bake in the preheated oven for about 20-25 minutes, or until the cheese is melted and bubbly.
  8. Garnish and Serve: Remove from the oven and garnish with chopped cilantro if desired. Serve hot.

Notes

For added flavor, serve with fresh cilantro, sliced jalapeños, or a dollop of sour cream.
