Quick Mediterranean Chicken Tacos

Enjoy fresh Mediterranean flavors with these quick and easy chicken tacos, perfect for lunch or dinner.

  • 2 cups cooked chicken, shredded
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 red onion, finely chopped
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup Kalamata olives, sliced
  • 1/4 cup fresh parsley, chopped
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 8 small tortillas
  • Tzatziki sauce (optional)

Instructions

  1. Combine the shredded chicken, cherry tomatoes, cucumber, red onion, feta cheese, olives, parsley, oregano, salt, and pepper in a large bowl.
  2. Warm the tortillas in a skillet or microwave.
  3. Spoon the chicken mixture into each tortilla.
  4. Drizzle with tzatziki sauce if desired.
  5. Serve immediately and enjoy your quick and delicious tacos!

Notes

Use leftover chicken to save time. Rotisserie chicken works great for this recipe.
