Raspberry Chia Pudding

A healthy and delicious chia pudding filled with fiber, omega-3 fatty acids, and antioxidants, perfect for breakfast or a snack.

Ingredients

  • 1/4 cup chia seeds
  • 1 cup unsweetened almond milk (or milk of choice)
  • 2 tablespoons pure maple syrup
  • 1/2 teaspoon vanilla extract
  • 1/2 cup fresh or frozen raspberries (plus more for topping)
  • Sliced almonds or chopped nuts
  • Shredded coconut
  • Extra drizzle of maple syrup

Instructions

  1. In a medium bowl, combine chia seeds, almond milk, maple syrup, and vanilla extract. Stir well to mix all the ingredients.
  2. In a separate bowl, mash the raspberries with a fork until smooth, leaving some chunks for texture if desired.
  3. Pour the mashed raspberries into the chia mixture and stir until combined. Cover and refrigerate for at least 120 minutes or overnight.
  4. Once set, stir the pudding and serve in bowls, topped with sliced almonds, shredded coconut, extra raspberries, and a drizzle of maple syrup.

Notes

Stir well to avoid clumps of chia seeds. For a creamier texture, blend the chia mixture after it has set. Adjust sweetness to taste.
