Raspberry Lemonade Bars

Delightful bars combining sweet raspberries and zesty lemons, perfect for any occasion.

Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1/4 teaspoon salt
  • 1 cup fresh raspberries
  • 3 large eggs
  • 2 cups powdered sugar
  • 1/4 cup fresh lemon juice
  • Zest of one lemon
  • 1/2 teaspoon baking powder

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a baking dish.
  2. Mix together the flour, granulated sugar, softened butter, and salt until crumbly. Press the dough into the bottom of the greased baking dish to form a crust.
  3. Bake the crust in the oven for about 15 minutes, or until lightly golden.
  4. Whisk together the eggs, powdered sugar, fresh lemon juice, lemon zest, and baking powder until smooth.
  5. Fold in the fresh raspberries gently.
  6. Pour the raspberry mixture over the baked crust.
  7. Bake for an additional 20-25 minutes or until set.
  8. Cool before drizzling with a glaze made from powdered sugar and lemon juice. Cut into bars and serve.

Notes

Best served chilled or at room temperature. Can be garnished with extra raspberries or lemon zest.
