Refreshing California Roll Cucumber Salad

A quick, fresh, and light salad that tastes like a California roll, featuring cucumbers, crab, avocado, and a creamy dressing.

  • 2 cups Cucumbers (English cucumbers preferred)
  • 8 oz Imitation Crab or Crab Meat (or cooked shrimp/tofu)
  • 1 medium Avocado (cubed just before serving)
  • 2 tbsp Mayonnaise (light for healthier option)
  • 2 oz Cream Cheese (or Greek yogurt)
  • 2 tbsp Soy Sauce (low-sodium if preferred)
  • 1 tbsp Sesame Seeds (optional garnish)

Instructions

  1. Wash and dry the cucumber. Slice thin or cut into small cubes.
  2. Cut the crab or shrimp into bite-size pieces.
  3. Cube the avocado right before mixing to avoid browning.
  4. Add mayonnaise, cream cheese, and soy sauce to a bowl. Stir until smooth.
  5. Mix in cucumber, crab, and avocado gently to coat.
  6. Sprinkle sesame seeds on top for a light crunch.
  7. Taste and adjust soy sauce or mayo if desired.

Notes

Chill ingredients before mixing for a fresher taste. Store in an airtight container for up to 24 hours but consume the same day for best texture.
