Rotel Pasta

A delicious one-pot dish combining zesty Rotel tomatoes, pasta, and ground beef, perfect for busy weeknight dinners.

Ingredients

  • 1 lb ground beef
  • 1 can Rotel tomatoes
  • 1 package pasta (rotini or penne)
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • 1 cup beef broth
  • 1 onion, chopped
  • 1 packet taco seasoning
  • Salt and pepper to taste

Instructions

  1. Brown the ground beef with chopped onions and season with taco seasoning. Drain excess fat.
  2. Combine the browned beef, Rotel tomatoes, beef broth, and pasta in a crockpot.
  3. Stir well to combine and cover.
  4. Cook on low for 240-360 minutes or on high for 120-180 minutes until the pasta is cooked.
  5. Stir in shredded cheese until melted.
  6. Add salt and pepper to taste and serve.

Notes

For added spice, consider using the hot variety of Rotel tomatoes. You can also make it vegetarian by swapping out ground beef for black beans or lentils.
