Sheet Pan Chicken Fajitas

Quick and easy Sheet Pan Chicken Fajitas cooked with chicken and fresh vegetables, perfect for weeknights.

  • 1 lb chicken breasts, sliced
  • 1 bell pepper, sliced
  • 1 onion, sliced
  • 2 tablespoons olive oil
  • 2 teaspoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Tortillas for serving
  • Optional toppings: sour cream, guacamole, salsa

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Combine sliced chicken, bell pepper, onion, olive oil, chili powder, cumin, garlic powder, salt, and pepper in a large bowl. Toss to coat.
  3. Spread the mixture evenly on a sheet pan.
  4. Bake for 20-25 minutes, or until the chicken is cooked through and the vegetables are tender.
  5. Serve with warm tortillas and your choice of toppings.

Notes

For best results, slice chicken and vegetables to similar thickness and do not crowd the pan for even roasting.
