Simple Keto White Chicken Chili

A creamy and filling keto-friendly white chicken chili, perfect for cozy weeknight dinners without the heavy carbs.

  • 2 cups shredded cooked chicken (rotisserie recommended)
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 8 ounces cream cheese, softened
  • 1 onion, diced
  • 12 green chiles, diced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt to taste
  • Fresh cilantro, for garnish (optional)
  • Shredded cheese, for garnish (optional)
  • Sour cream, for garnish (optional)
  • Diced avocado, for garnish (optional)
  • Jalapenos, for garnish (optional)

Instructions

  1. In a large pot or Dutch oven, combine the shredded chicken, chicken broth, and diced onion over medium heat.
  2. Once the mixture is heated through, stir in the green chiles, cumin, chili powder, and salt.
  3. Lower the heat and add the cream cheese, stirring slowly until melted and creamy.
  4. Stir in the heavy cream and allow it to heat without boiling for a few minutes.
  5. Serve hot, topped with shredded cheese, sour cream, diced avocado, fresh cilantro, and jalapenos if desired.

Notes

For a thicker chili, simmer uncovered for a few minutes at the end. Adjust spices and toppings according to personal preference.
