Slow Cooker Chicken Enchiladas

A simple and delicious Slow Cooker Chicken Enchiladas recipe that brings the taste of Mexico to your kitchen.

  • 2 lbs Chicken breast
  • 1 can Enchilada sauce
  • 1 can Green chiles
  • 1 Onion, chopped
  • 1 tsp Garlic seasoning
  • 1 tsp Salt
  • 8 Tortillas
  • 2 cups Shredded cheese
  • 1 cup Sour cream
  • 1 can Diced tomatoes
  • 1 Avocado, sliced
  • 1/4 cup Fresh cilantro, chopped

Instructions

  1. Place the chicken breast in the slow cooker.
  2. Add the enchilada sauce, green chiles, chopped onion, garlic seasoning, and salt.
  3. Cover and cook on low for 360-480 minutes or high for 180-240 minutes until the chicken is cooked through.
  4. Shred the chicken with two forks and mix it with the sauce.
  5. Serve in tortillas and top with your favorite toppings.

Notes

For extra flavor, consider adding spices like cumin or chili powder. You can also customize this recipe by using beans instead of chicken for a vegetarian version.
