Slow Cooker Chicken Fajitas

Easy and flavorful Slow Cooker Chicken Fajitas with colorful peppers and onions, perfect for busy days.

  • 2 pounds boneless, skinless chicken breasts, sliced into thin strips
  • 3 large bell peppers, sliced
  • 1 large onion or 2 small onions, sliced
  • 15 ounces diced tomatoes or salsa
  • 1/3 cup fajita seasonings
  • Salt & pepper to season the chicken
  • 3/4 cup low-sodium chicken broth (for Instant Pot only)
  • Fajita Seasoning:
  • 2 tablespoons chili powder
  • 1 tablespoon cumin
  • 1 1/2 teaspoons salt
  • 1 1/2 teaspoons oregano
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon pepper

Instructions

  1. Season the chicken with salt and pepper.
  2. Add the chicken and all the other ingredients to the slow cooker. Stir to mix well.
  3. Cook on HIGH for 120-180 minutes or LOW for 240-360 minutes.
  4. For the Instant Pot, add the chicken broth and follow the standard pressure cooking instructions.
  5. Serve hot with tortillas, and top with your favorite toppings like cheese, sour cream, guacamole, or cilantro.

Notes

For extra flavor, marinate the chicken in the fajita seasoning for a few hours before cooking. Use a mix of bell peppers for a colorful dish, and add jalapeños for extra heat.
