Slow Cooker Lemon Herb Chicken and Rice

  • 4 boneless, skinless chicken breasts
  • 1 cup rice
  • 2 cups chicken broth
  • 2 lemons (zested and juiced)
  • 3 cloves garlic (minced)
  • 1 onion (chopped)
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh parsley (for garnish)

Instructions

  1. Combine the chicken, rice, chicken broth, lemon juice, lemon zest, garlic, onion, thyme, oregano, salt, and pepper in a slow cooker. Stir well.
  2. Cover the slow cooker and cook on low for 360-420 minutes or on high for 180-240 minutes, until the chicken is cooked through and the rice is tender.
  3. Remove the chicken from the slow cooker, shred it, and return it to the pot.
  4. Stir everything together and let it sit for a few minutes to absorb the flavors.
  5. Serve garnished with fresh parsley.

Notes

For extra flavor, use homemade chicken broth. Adding extra vegetables like carrots or peas can enhance the dish. Consider adding a sprinkle of cheese for a richer taste.
