Smothered Chicken and Rice

A comforting and filling dish combining tender chicken with creamy rice, perfect for busy weeknights or cozy weekends.

Ingredients

  • 2 chicken breasts
  • 1 cup rice
  • 2 cups chicken broth
  • 1 can cream of mushroom soup
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Chopped parsley for garnish (optional)

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Season chicken breasts with salt and pepper. Cook until golden brown on both sides, about 5-7 minutes. Remove from skillet and set aside.
  3. Add onion and garlic to the same skillet, sauté until softened.
  4. Stir in the cream of mushroom soup and chicken broth, bringing to a simmer.
  5. Add the rice to the skillet, then place the chicken back on top.
  6. Cover and cook for about 20-25 minutes, or until rice is tender and chicken is cooked through.
  7. Garnish with chopped parsley if desired and serve.

Notes

For added nutrition, consider using brown rice, and a splash of lemon juice can enhance the flavors.
