Spinach Stuffed Chicken Breasts

A simple and delicious recipe for chicken breasts stuffed with a creamy spinach and cheese mixture, perfect for a quick weekday dinner or an elegant meal for guests.

  • 4 chicken breasts
  • 2 cups fresh spinach
  • 1 cup ricotta cheese
  • 1/2 cup mozzarella cheese
  • 2 cloves garlic, minced
  • 1 teaspoon olive oil
  • Salt and pepper to taste
  • 1/4 teaspoon red pepper flakes (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Heat olive oil in a skillet over medium heat. Sauté garlic until fragrant, then add spinach and cook until wilted.
  3. In a bowl, mix sautéed spinach with ricotta, mozzarella, salt, pepper, and red pepper flakes.
  4. Cut pockets into the chicken breasts and stuff them with the spinach mixture.
  5. Place the stuffed chicken breasts in a baking dish and season with salt and pepper.
  6. Bake for 25-30 minutes or until chicken is cooked through.
  7. Let rest for a few minutes before serving.

Notes

For best results, use fresh spinach and be careful not to overbake the chicken. A light lemon wedge pairs well with the dish.
