Starbucks Copycat Lemon Loaf

A light, fluffy lemon loaf that replicates the delicious treat from Starbucks, perfect for anytime enjoyment.

  • 1 1/2 cups all-purpose flour
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 3 large eggs
  • 1 cup granulated sugar
  • 1/2 cup sour cream or Greek yogurt
  • 1/2 cup vegetable oil
  • 2 tbsp unsalted butter, melted
  • 2 tbsp lemon zest (from about 2 lemons)
  • 1/4 cup fresh lemon juice
  • 1 tsp vanilla extract
  • 1/2 tsp lemon extract
  • 1 cup powdered sugar
  • 23 tbsp fresh lemon juice
  • 1/2 tsp lemon zest (optional, for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and line a 9×5-inch loaf pan with parchment paper.
  2. Whisk together the flour, baking powder, baking soda, and salt in a medium bowl. Set aside.
  3. Whisk together the eggs, sugar, sour cream, oil, and melted butter until smooth in a large mixing bowl. Stir in the lemon zest, lemon juice, vanilla extract, and lemon extract.
  4. Gradually add the dry ingredients to the wet ingredients, stirring gently until just combined. Be careful not to overmix.
  5. Pour the batter into the prepared loaf pan and smooth the top. Bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean. Let the loaf cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
  6. Whisk together the powdered sugar and 2-3 tablespoons of lemon juice in a small bowl until smooth. Adjust the consistency as needed.
  7. Drizzle the lemon glaze over the cooled loaf and garnish with lemon zest if desired. Slice and enjoy!

Notes

For best flavor, use fresh lemons and avoid overmixing the batter. Let the loaf cool completely before adding the glaze.
