Super Easy Lemon Bars

Delightful lemon bars that combine tart lemon flavor with a sweet, buttery crust, perfect for any occasion.

  • 1/2 cup Unsalted Butter (room temperature)
  • 1 cup All-Purpose Flour
  • 1/4 cup Powdered Sugar
  • 1/2 cup Lemon Juice (23 lemons)
  • 1 tbsp Lemon Zest (finely grated)
  • 3 Large Eggs (room temperature)
  • 1 1/2 cups Granulated Sugar
  • 1/2 cup All-Purpose Flour (sifted)
  • Powdered Sugar (for dusting)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together the unsalted butter and powdered sugar.
  3. Slowly add 1 cup of all-purpose flour and mix until combined.
  4. Press this mixture into the bottom of a greased 9×9-inch baking dish.
  5. Bake for about 18 minutes, until lightly golden.
  6. In another bowl, whisk together the eggs, granulated sugar, lemon juice, lemon zest, and sifted flour until smooth.
  7. Pour this mixture over the baked shortbread crust.
  8. Return to the oven and bake for an additional 20-25 minutes until the filling is set and slightly golden.
  9. Allow the lemon bars to cool completely in the dish.
  10. Dust the top with powdered sugar before cutting them into squares.

Notes

Store in an airtight container in the refrigerator for up to a week or freeze for up to three months. Use fresh lemons for best flavor.
