Super Easy Lemon Bars

Delightful lemon bars combining sweet and tart flavors, perfect for any occasion.

  • 1/2 cup Unsalted Butter (room temperature)
  • 1 cup All-Purpose Flour
  • 1/4 cup Powdered Sugar
  • 1/2 cup Lemon Juice (23 lemons)
  • 1 tbsp Lemon Zest (finely grated)
  • 3 Large Eggs (room temperature)
  • 1 1/2 cups Granulated Sugar
  • 1/2 cup All-Purpose Flour (sifted)
  • Powdered Sugar (for dusting)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×9 inch baking pan.
  2. Mix 1 cup of all-purpose flour with 1/4 cup of powdered sugar in a bowl.
  3. Cut in the 1/2 cup of room temperature unsalted butter until the mixture resembles coarse crumbs.
  4. Press this mixture into the bottom of your prepared baking pan.
  5. Bake for 15 minutes, or until lightly golden.
  6. Whisk together the 3 large eggs and 1 1/2 cups of granulated sugar until well combined in a large bowl.
  7. Add the 1/2 cup of lemon juice and 1 tbsp of lemon zest to the mixture and stir well.
  8. Sift in the 1/2 cup of flour and blend until smooth.
  9. Pour the lemon mixture over the baked crust.
  10. Return the pan to the oven and bake for an additional 20-25 minutes, until the lemon filling is set but still slightly jiggly in the center.
  11. Let cool completely in the pan.
  12. Dust with powdered sugar, cut into squares, and enjoy!

Notes

Ensure your butter is at room temperature for easy mixing. Use fresh lemon juice for the best flavor.
