Blackberry Pistachio Dream Bars

A delightful dessert bar featuring a buttery crust, creamy layer, and a fruity blackberry swirl topped with crunchy pistachios.

  • 1 1/2 cups all purpose flour
  • 1/4 teaspoon salt
  • 1/2 cup powdered sugar
  • 1/2 cup cold butter
  • 8 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 egg
  • 1/2 cup blackberry jam or preserves
  • 1/2 cup fresh blackberries (optional)
  • 1/4 cup chopped pistachios
  • Zest of 1 lemon (optional)

Instructions

  1. Preheat your oven to 350°F and line an 8×8 inch pan with parchment paper.
  2. Mix flour, powdered sugar, and salt, then cut in cold butter until it looks like sandy crumbs. Press firmly into the pan. Bake for 15–18 minutes until lightly golden.
  3. While the crust bakes, beat cream cheese and granulated sugar until smooth. Add egg and vanilla, mix until creamy.
  4. Pour cream cheese mixture over the warm crust, smooth it out, then dollop blackberry jam on top and swirl gently with a knife. Sprinkle chopped pistachios over the top.
  5. Bake again for 22–28 minutes until the center is set but still has a tiny jiggle. Cool completely then chill for at least 2 hours before slicing.

Notes

For best results, use cold butter for the crust and do not skip the chilling time to ensure clean slices.
