Sweet Hawaiian Crockpot Chicken

A delicious and easy crockpot meal combining sweet pineapple and tender chicken with soy sauce and spices, perfect for busy days.

Ingredients

  • 2 pounds chicken breasts
  • 1 cup pineapple chunks
  • 1/2 cup soy sauce
  • 1/4 cup brown sugar
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 1 red bell pepper, sliced
  • 1 onion, sliced
  • Salt and pepper to taste
  • Green onions for garnish

Instructions

  1. In a slow cooker, combine the chicken breasts, pineapple chunks, soy sauce, brown sugar, garlic, ginger, red bell pepper, and onion.
  2. Season with salt and pepper to taste.
  3. Cover and cook on low for 360 minutes or on high for 240 minutes until the chicken is cooked through and tender.
  4. Shred the chicken in the crockpot and stir well to combine with the sauce.
  5. Serve over rice and garnish with sliced green onions.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3-4 days or freeze for up to 2-3 months. Thaw in the refrigerator overnight before reheating.
