Taco Bell Mexican Pizza

A delightful dish combining the flavors of classic tacos with the fun format of pizza, perfect for family dinners or game days.

  • 1 lb ground beef (or ground turkey/chicken)
  • 1 packet taco seasoning (or 2 Tbsp homemade blend)
  • 2/3 cup water
  • 8 small (6-inch) flour tortillas (or corn tortillas, lightly fried)
  • 1 can (15 oz) refried beans
  • 1/4 cup water (to thin beans slightly)
  • 1 cup red enchilada sauce (or mild taco sauce)
  • 2 cups shredded Mexican blend cheese (or cheddar/monterey jack)
  • 1/2 cup diced tomatoes
  • 1/4 cup sliced green onions
  • 1/4 cup sliced black olives (optional)
  • Oil for frying (or cooking spray if baking)

Instructions

  1. Cook the meat: In a skillet, cook ground beef over medium heat until browned. Drain excess fat. Add taco seasoning and water. Simmer for 5 minutes until thickened.
  2. Prepare beans: In a small saucepan, warm refried beans with 1/4 cup water, stirring until smooth and spreadable.
  3. Crisp tortillas: Fried method: Heat 2–3 Tbsp oil in a skillet. Fry tortillas one at a time until golden and crisp, about 1–2 minutes per side. Drain on paper towels. Healthier method: Brush or spray tortillas lightly with oil. Bake at 400°F (200°C) for 5–7 minutes per side until crisp.
  4. Assemble pizzas: Place one tortilla on a baking sheet. Spread a layer of beans, then a layer of seasoned meat. Top with another tortilla. Spread a spoonful of enchilada or taco sauce over the top. Sprinkle with cheese, then add diced tomatoes, green onions, and olives.
  5. Bake: Bake pizzas at 400°F (200°C) for 8–10 minutes, until cheese is melted and bubbly.
  6. Serve: Slice into quarters and serve hot with extra taco sauce or sour cream if desired.

Notes

Use fresh ingredients for the best flavor. Customize toppings according to your taste and consider making a vegetarian version.
