Texas Roadhouse Smothered Chicken

Delicious dish featuring tender chicken breasts smothered in savory onions, mushrooms, and melted cheese.

  • 4 boneless skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1 medium yellow onion, sliced
  • 8 ounces mushrooms, sliced
  • 1/3 cup chicken broth
  • 1 cup shredded mozzarella cheese
  • 1 tablespoon chopped fresh parsley (optional)

Instructions

  1. Pat the chicken breasts dry and season both sides with salt, pepper, garlic powder, and smoked paprika.
  2. Heat olive oil and butter in a large skillet over medium-high heat.
  3. Sear the chicken breasts for 4–5 minutes on each side until golden. Remove and set aside.
  4. In the same skillet, add the sliced onions and mushrooms. Sauté for 8–10 minutes until softened.
  5. Pour in chicken broth and scrape the bottom of the pan to deglaze.
  6. Return the chicken breasts to the skillet, spoon the onions and mushrooms over each.
  7. Sprinkle mozzarella cheese evenly over each chicken breast.
  8. Cover and reduce heat to low. Cook for another 5–7 minutes until cheese is melted and chicken is fully cooked (165°F internal temperature).
  9. Garnish with parsley and serve hot.

Notes

This dish pairs well with rice, mashed potatoes, or a fresh salad. You can customize it with different cheeses or vegetables.
