Twice Baked Potato Casserole

A warm, creamy casserole dish that blends mashed potatoes with cheese, turkey bacon, and green onions, perfect for family dinners.

  • 3 lbs Potatoes
  • 6 strips Turkey bacon
  • 2 cups Cheese
  • 1 cup Sour cream
  • 1/2 cup Green onions
  • 1/2 cup Butter
  • Salt to taste
  • Pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Boil the potatoes until tender, then drain and let cool slightly.
  3. Mash the potatoes in a large bowl and mix in the cooked turkey bacon, cheese, sour cream, green onions, butter, salt, and pepper.
  4. Transfer the mixture to a greased baking dish and spread it evenly.
  5. Bake for 25-30 minutes until heated through and the top is slightly golden.
  6. Serve hot as a side dish.

Notes

Let the casserole sit for 5 minutes after baking to firm up. Add extra cheese on top in the last 5 minutes for a golden crust.
