Valentine Ganache Cookies

Delightful cookies with chocolate and pink flavors, topped with creamy ganache – perfect for celebrating love.

  • ½ cup (113 g) unsalted butter, softened
  • ½ cup (100 g) granulated sugar
  • ½ cup (100 g) brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup (125 g) all-purpose flour
  • ½ cup (45 g) unsweetened cocoa powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ teaspoon espresso powder (optional)
  • ½ cup (113 g) unsalted butter, softened
  • ½ cup (100 g) granulated sugar
  • ½ cup (100 g) brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1½ cups (190 g) all-purpose flour
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 23 teaspoons freeze-dried raspberry powder or pink food coloring
  • ½ cup (120 ml) heavy cream
  • ¾ cup (130 g) dark or white chocolate chips, finely chopped
  • 1 tablespoon (14 g) butter (optional)
  • Freeze-dried raspberries (optional)
  • Chocolate squares (optional)
  • Heart sprinkles (optional)
  • Melted white chocolate for drizzling (optional)

Instructions

  1. Prepare each dough flavor separately. Start with the chocolate dough by creaming together the softened butter and sugars until light and fluffy. Then add the egg and vanilla, mixing well.
  2. Stir in the dry ingredients (flour, cocoa powder, baking soda, salt, and espresso powder if using).
  3. For the pink dough, repeat the same process as for the chocolate dough, using the specified ingredients.
  4. Chill both doughs in the refrigerator for about 30 minutes to make them easier to handle.
  5. Preheat your oven to 350°F (175°C). Scoop the chilled dough into balls and place them on a baking sheet. Press a well in the center of each ball with your thumb.
  6. Bake for 10–12 minutes. After removing them from the oven, gently re-press the centers to create space for the ganache.
  7. Allow the cookies to cool completely on a wire rack.
  8. To make the ganache, heat the heavy cream until just boiling, then pour it over the chopped chocolate. Let it sit for a minute, then stir until smooth.
  9. If using, add butter for extra richness.
  10. Fill the centers of the cooled cookies with the ganache and decorate with optional toppings as desired.
  11. Let the ganache set at room temperature, or chill briefly before serving.

Notes

Store in an airtight container at room temperature for up to a week, or refrigerate for up to two weeks.
