Vegan Stuffed Sweet Potatoes

  • 4 medium Sweet Potatoes
  • 2 tbsp Olive Oil
  • Salt and Black Pepper to taste
  • 15 oz Black Beans, rinsed and drained
  • 15 oz Chickpeas, rinsed and drained
  • 1 Red Onion
  • 2 cloves Garlic, minced
  • 1 tsp Cumin
  • 1 tsp Smoked Paprika
  • 1/2 tsp Chili Powder
  • 1 tbsp Lime Juice
  • 1/4 cup Fresh Cilantro, chopped
  • 1/3 cup Tahini
  • 2 tbsp Lemon Juice
  • 1 tsp Maple Syrup
  • 1/4 tsp Garlic Powder
  • Cold Water, for adjusting consistency

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash the sweet potatoes and poke holes in them with a fork.
  3. Place them directly on the oven rack and bake for about 45 minutes or until they are soft and tender.
  4. Heat olive oil in a large pan over medium heat.
  5. Add the red onion and garlic, and cook until the onion is soft.
  6. Add the black beans, chickpeas, cumin, smoked paprika, chili powder, salt, and pepper.
  7. Cook this mixture for about 5-7 minutes, stirring occasionally.
  8. Add lime juice and cilantro, and mix well.
  9. Combine tahini, lemon juice, maple syrup, garlic powder, and cold water in a bowl.
  10. Stir until smooth and adjust the consistency with more water if needed.
  11. Slice the baked sweet potatoes open.
  12. Spoon the filling into the sweet potatoes and drizzle with tahini sauce.
  13. Garnish with extra cilantro if desired.

Notes

Choose firm and smooth sweet potatoes for best texture. Feel free to customize the filling with additional vegetables or spices to taste.
