Walking Taco Casserole

A fun and easy dish that combines all the flavors of a walking taco into a warm, cheesy casserole, perfect for family dinners and gatherings.

  • 1 pound ground turkey
  • 1 packet taco seasoning
  • 1 can black beans, drained and rinsed
  • 1 cup corn
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • 3 cups Fritos corn chips
  • 1 cup sour cream
  • 1 cup salsa

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cook the ground turkey in a large skillet over medium heat until browned. Add taco seasoning and mix well.
  3. Layer the ground turkey, black beans, corn, and half of the cheese in a baking dish.
  4. Add a layer of Fritos corn chips on top.
  5. Repeat the layers, finishing with the remaining cheese on top.
  6. Bake for 20-25 minutes until cheese is melted and bubbly.
  7. Serve hot, topped with sour cream and salsa.

Notes

You can customize with toppings like sliced jalapeños, diced tomatoes, or chopped green onions. Serve with a side salad for a crunchy contrast.
