Zero Carb Yogurt Bread

A low-carb, gluten-free alternative to traditional bread, made with yogurt and eggs for moisture and structure.

Ingredients

  • 6 large eggs
  • 0.5 cup full-fat Greek yogurt (unsweetened and plain)
  • 1 tablespoon baking powder
  • 0.25 cup melted butter or coconut oil
  • 0.25 teaspoon salt
  • 0.5 teaspoon xanthan gum or psyllium husk powder
  • 0.5 cup finely ground almond flour (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Whisk together the eggs and Greek yogurt until smooth.
  3. Add in the melted butter or coconut oil, and mix until combined.
  4. Stir in the baking powder, salt, xanthan gum or psyllium husk powder, and almond flour (if using). Mix until all ingredients are well combined.
  5. Pour the batter into a greased loaf pan.
  6. Bake in the preheated oven for about 30-35 minutes, or until the top is golden and a toothpick inserted into the center comes out clean.
  7. Let it cool before slicing. Serve warm or at room temperature.

Notes

Make sure all your ingredients are at room temperature for better mixing. Consider adding herbs, garlic powder, or cheese into the batter for added flavor.
