Zucchini Brownies

Delicious, fudgy brownies made with grated zucchini, offering a guilt-free dessert option packed with moisture and nutrition.

  • 1 cup grated zucchini
  • 1 cup flour
  • ½ cup unsweetened cocoa powder
  • 1 cup sugar
  • ½ cup vegetable oil
  • 2 large eggs
  • 1 tsp vanilla extract
  • ½ tsp baking soda
  • ½ tsp salt
  • ½ cup chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a baking pan.
  2. In a large bowl, whisk together the flour, cocoa powder, baking soda, and salt.
  3. In another bowl, mix the sugar, vegetable oil, eggs, and vanilla extract until well combined.
  4. Stir in the grated zucchini into the wet ingredients.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined. Fold in chocolate chips if using.
  6. Pour the batter into the prepared baking pan and spread evenly.
  7. Bake for 25-30 minutes or until a toothpick inserted comes out clean.
  8. Allow to cool before cutting into squares and enjoy!

Notes

Squeeze out excess moisture from the grated zucchini before adding it to the batter to prevent overly wet brownies.
