Blackberry Cheesecake Brownies

A delightful treat combining rich chocolate brownie and creamy cheesecake with a fruity blackberry twist.

  • ½ cup unsalted butter (melted)
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ⅓ cup unsweetened cocoa powder
  • ½ cup all-purpose flour
  • ¼ teaspoon salt
  • 8 oz cream cheese (softened)
  • ¼ cup granulated sugar
  • 1 large egg
  • ½ teaspoon vanilla extract
  • ⅓ cup blackberry jam or preserves (warmed slightly) or ½ cup fresh blackberries mashed with 1 tablespoon sugar

Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper or lightly grease it.
  2. Whisk together the melted butter and granulated sugar until smooth. Add the eggs one at a time, along with the vanilla extract, mixing well.
  3. Stir in the cocoa powder, flour, and salt until just incorporated.
  4. Spread this brownie batter evenly into the prepared pan.
  5. Beat the cream cheese with sugar, one egg, and vanilla extract until smooth.
  6. Spread this cheesecake mixture over the brownie layer in the pan.
  7. Spoon dollops of warmed blackberry jam or mashed blackberries over the cheesecake layer.
  8. Swirl the blackberry mixture into the cheesecake with a knife or toothpick to create a marbled effect.
  9. Bake for 35 to 40 minutes, until the center is set and a toothpick comes out with a few moist crumbs.
  10. Cool completely in the pan on a wire rack, then chill in the refrigerator for at least 1 hour before slicing.

Notes

Allow the brownies to cool completely for cleaner cuts. Use room temperature cream cheese for easier mixing.
