Blackberry Cheesecake Brownies

Deliciously rich brownies combined with creamy cheesecake and topped with fresh blackberries for a delightful treat.

  • 1 cup unsalted butter
  • 2 cups granulated sugar
  • 1 cup brown sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 cup unsweetened cocoa powder
  • 1/2 teaspoon salt
  • 8 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup fresh blackberries (Can substitute with frozen blackberries)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and line a 9×13 inch baking pan with parchment paper, allowing some overhang for easy removal.
  2. Melt the butter in a medium saucepan over low heat. Remove from heat and stir in the granulated sugar and brown sugar until well combined. Let it cool slightly.
  3. Add the eggs one at a time, stirring well after each addition. Mix in the vanilla extract.
  4. Whisk together the flour, cocoa powder, and salt in a separate bowl. Gradually add the dry ingredients to the wet mixture, stirring until just combined. Pour half of the brownie batter into the prepared baking pan, spreading it evenly.
  5. Beat the cream cheese, granulated sugar, egg, and vanilla extract in a mixing bowl until smooth and creamy. Gently fold in the blackberries.
  6. Spoon the cheesecake mixture over the brownie layer in the pan. Top with the remaining brownie batter, swirling gently with a knife to create a marbled effect.
  7. Bake in the preheated oven for 30-35 minutes or until a toothpick inserted into the middle comes out with a few moist crumbs.
  8. Allow the brownies to cool in the pan for at least 15 minutes before lifting them out using the parchment overhang. Let them cool completely on a wire rack before cutting into squares.

Notes

Serve these brownies chilled or at room temperature. They are delicious on their own or with ice cream or whipped cream.
