Blackberry Lemon Cake Roll

  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 teaspoons lemon zest
  • 3 large eggs
  • 3/4 cup granulated sugar
  • 8 ounces cream cheese
  • 1 cup fresh blackberries
  • 1/2 cup powdered sugar

Instructions

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. Mix together the flour, baking powder, and salt in a bowl. Set aside.
  3. Beat the eggs and sugar together in another bowl until light and fluffy.
  4. Add the lemon zest to the egg mixture and mix well.
  5. Fold the dry ingredients into the wet ingredients until just combined.
  6. Pour the batter onto the prepared baking sheet and spread it evenly.
  7. Bake for about 12-15 minutes, or until the cake is lightly golden.
  8. Roll the cake carefully while it’s still warm in a kitchen towel.
  9. Allow it to cool completely.
  10. Mix the cream cheese with powdered sugar until smooth in a separate bowl.
  11. Filing the cream cheese mixture gently fold in the fresh blackberries.
  12. Unroll the cooled cake and spread the cream cheese mixture evenly over it.
  13. Roll the cake back up without the towel and wrap it in plastic wrap.
  14. Refrigerate for at least an hour before serving.

Notes

Ensure eggs are at room temperature for better mixing. Use fresh blackberries for the best flavor.
