Cheesy Muffin Tin Cottage Cheese Egg Bites

Quick and healthy egg bites packed with protein, customizable with your favorite veggies, perfect for breakfast or snacks.

  • 6 large eggs
  • 1 cup cottage cheese
  • 1 cup shredded cheese (cheddar or your choice)
  • 1 cup chopped vegetables (spinach, bell peppers, onions)
  • Salt and pepper to taste
  • Cooking spray or oil for greasing the muffin tin

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Whisk together the eggs, cottage cheese, and shredded cheese until well combined.
  3. Stir in the chopped vegetables and season with salt and pepper.
  4. Grease a muffin tin with cooking spray or oil.
  5. Pour the egg mixture into the muffin cups, filling them about 3/4 full.
  6. Bake for 20-25 minutes or until the egg bites are set and slightly golden on top.
  7. Allow to cool for a few minutes before removing from the muffin tin. Serve warm or store in the refrigerator for meal prep.

Notes

Feel free to customize with additional vegetables and spices to your liking. These egg bites can be refrigerated for up to five days or frozen for up to three months.
