Cherry Amaretto Tiramisu

A delightful twist on the classic Italian dessert featuring rich cherries and a subtle almond flavor, perfect for any occasion.

  • 2 cups fresh cherries, pitted and halved
  • 3 tbsp granulated sugar
  • ¼ cup Amaretto liqueur (or almond extract substitute)
  • 1 tbsp lemon juice
  • 1 cup heavy cream, cold
  • 1 cup mascarpone cheese, room temperature
  • ⅓ cup powdered sugar
  • 1 tsp vanilla extract
  • ¾ cup brewed espresso or strong coffee, cooled
  • 2 tbsp Amaretto liqueur (or almond extract substitute)
  • 1 pack (approx. 24) ladyfinger biscuits (gluten-free if preferred)
  • Unsweetened cocoa powder (for dusting)
  • Fresh cherries and shaved dark chocolate (optional)

Instructions

  1. Combine cherries, sugar, lemon juice, and Amaretto in a saucepan. Cook over medium heat for 5–7 minutes until soft.
  2. Remove from heat and let cool completely.
  3. Beat the cold cream in a large bowl to soft peaks.
  4. Whisk mascarpone, powdered sugar, and vanilla in another bowl until smooth.
  5. Fold the whipped cream into the mascarpone until fluffy.
  6. Stir Amaretto into the cooled espresso.
  7. Dip ladyfingers briefly into the espresso-Amaretto mixture.
  8. Arrange a single layer in the bottom of an 8″x8″ dish or trifle glasses.
  9. Spoon half the mascarpone cream over the ladyfingers.
  10. Add half of the cherry mixture over the cream evenly.
  11. Repeat layers: dipped ladyfingers, mascarpone cream, and remaining cherries.
  12. Cover and refrigerate for at least 4 hours or overnight.
  13. Dust with cocoa powder and top with shaved chocolate and extra cherries before serving.

Notes

Serve directly from the dish or in individual trifle glasses for an elegant presentation. Best enjoyed within 2-3 days.
